Leftover Turkey Broccoli Casserole
Ingredients 1 cup uncooked rice
Leftover Turkey, chopped up however you like
2 cans of turkey gravy
1 cup water
1 (10 ounce) package frozen broccoli
Directions
Preheat the oven to 350 degrees F.
Place rice and water (2 cups) in a saucepan over medium-high heat and bring to a boil. Once the water is boiling, reduce heat to low, cover, and simmer for 20 minutes, or until rice is tender. (Or use a rice cooker like I do - I know, I cheat!)
In a large bowl (very large), mix together the cubed turkey, rice and broccoli.
Stir in the gravy & the 1 cup of water, then season with pepper, salt, and any other spices you enjoy.
Transfer to a baking dish (I use a cake pan that has a plastic lid for quick and easy refrigeration of the leftovers), and cover with aluminum foil.
Bake for 45 to 50 minutes in the preheated oven, until evenly heated through.
